Barbagiuan: A Crispy Delight from the French Riviera

A Bit of History

The exact origins of Barbagiuan are shrouded in mystery, but it is believed to have originated in the town of Castellar in France. The name itself is thought to derive from the local Occitan dialect, meaning “Uncle John.” Legend has it that a man named Jean, unable to find a suitable sauce for his ravioli, improvised by filling them with cheese and Swiss chard and frying them instead. The result was a culinary triumph that quickly gained popularity throughout the region.   

The Perfect Bite

Barbagiuan are typically small, bite-sized parcels of joy. The pastry itself is light and airy, providing a satisfying crunch with each bite. Inside, you’ll find a flavorful filling that typically consists of a combination of spinach, leeks, cheese, and rice. The ingredients are finely chopped and mixed together, creating a harmonious blend of textures and flavors.

A Recipe for Success

If you’re feeling adventurous and want to try your hand at making Barbagiuan at home, here’s a basic recipe to get you started:

Ingredients:

  • For the pastry:
    • 200g plain flour
    • Dash of salt
    • 50ml olive oil
    • 1 egg, beaten
    • 50ml water
    • Vegetable oil for deep frying
  • For the filling:
    • 15ml olive oil
    • 30g onion, finely chopped
    • 30g leek (white part only), finely chopped
    • 100g spinach, finely chopped
    • 100g ricotta cheese
    • 50g grated Parmesan cheese
    • 50g cooked rice
    • Salt and pepper to taste

Instructions:

  1. Make the pastry:
    • In a bowl, combine the flour, salt, olive oil, egg, and water. Knead the dough until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.
  2. Prepare the filling:
    • Heat the olive oil in a pan and sauté the onion and leek until softened. Add the spinach and cook until wilted.
    • In a separate bowl, combine the ricotta, Parmesan cheese, cooked rice, and the sautéed vegetables. Season with salt and pepper to taste.
  3. Assemble and fry:
    • Roll out the pastry dough to a thickness of about 2mm. Cut out circles using a round cutter.
    • Place a spoonful of the filling in the center of each circle. Fold the pastry over the filling and seal the edges tightly.
    • Heat the vegetable oil in a deep fryer or large pot. Carefully fry the Barbagiuan until golden brown.
    • Remove from the oil and drain on paper towels.
